Tomato and Rosemary Focaccia

Bread, salt, rosemary and add in some cherry tomatoes, bonus points if they are homegrown of course.
Really what more could you want! This tomato and rosemary focaccia is the perfect dish for a starter before the main event.

1 In a bowl mix together the yeast, honey, and water, cover and then set aside to bloom.

2 Put the flour in a large bowl and make a well in the centre. Pour in the yeast, honey and water mixture and mix together until it forms a wet batter.

3 Place the above mixture into a large bowl that has the ½ cup of olive oil in the bottom. Cover and set aside until it doubles in size.

4 Once it has doubled in size, line a baking tray with baking paper and place a light coat of olive oil on the baking paper. Pour the dough mixture onto the baking tray, making a few dents with your fingers or a fork.

5 Drizzle the dough with some more olive oil and sprinkle with some finely chopped garlic. Cut the cherry tomatoes in half and push into the dough. Finally, cover the dough with rosemary and salt.

6 Rest the dough for 30 minutes and then bake at 180 degrees for 25 minutes.
