INGREDIENTS
- 200 g Beef scotch fillet, sirloin or rump steaks
- 1 Onion
- 2 cloves Garlic
- 1, 1/2 Tbsp Butter
- 1 Tbsp Olive oil
- 1/4 cup Mayonnaise
- 2 Tbsp Horseradish cream
- 2 Turkish or ciabatta rolls
- 4 slices Swiss or cheddar cheese
- 1 Tomato, sliced
- 2 cups Baby rocket or lettuce
METHOD
Season steak with salt and pepper and slather generously with Barker’s Smokey BBQ Marinade. Cover and refrigerate for at least 30 minutes.
Thinly slice onion and crush garlic. Melt butter in a small frying pan on medium-low heat. Add onion and garlic and cook, stirring occasionally, until golden, tender and caramelised. Stir through 2 tablespoons of Barker’s Smokey BBQ Marinade and season with salt and pepper to taste. Reduce heat to very low to keep warm.
Heat a separate frying pan (or barbecue) on medium-high. Cook steak for 4 minutes each side (for medium-rare), or until cooked to your liking. Baste frequently with extra marinade. Remove from pan, cover loosely with foil and leave to rest for 5 minutes before thinly slicing.
Mix mayonnaise and horseradish together. Place cheese on rolls and toast/grill. Spread with horseradish mayo and fill with steak, onions, tomato and lettuce. Serve immediately.
