Method
1Peel the cucumbers and dice them into very small cubes.
2Dice the tomato and onion into same-sized cubes.
3Mix cucumber, tomato, onion in a serving bowl and sprinkle with the dried mint or chopped fresh mint.
4Season with salt and pepper
5Squeeze the lemon and add its juice to the salad. Toss gently to coat. Serve immediately.
Note: This salad is very lemony and has no oil. You can use fresh or store-bought lime juice on it too.
